Sublime squash

This vegetable, a native to North America, often holds a place of pride on a table, but as a decoration and not often enough on our plate!
The flesh underneath the squash’s thick rind has a flavour similar to that of carrots, chestnuts, sweet potatoes, nuts and even artichokes.
Tasty and nutritious winter squash will keep for up to 6 months, depending on the variety, if stored at room temperature, away from light.
The more delicate summer squash need to be consumed more quickly, unless frozen.
Don’t be put off by the squash’s sturdy appearance! Give it a try, and you’ll be in for a treat!
